1 kilogram unripe, green Walnut
1 Vanilla bean (seeds)
1.3 kilograms sugar
2 allspice
1 tsp peppercorns
2 bay leaves
3 cloves
1 pinch Nutmeg (freshly grated)
½ tsp salt

Preparation steps

Rinse nuts, pat dry and prick several times with a needle. Place nuts in a tall jar and cover with cold water. Let stand 1.5-2 weeks, changing the water daily.

In a pot, combine drained nuts with plenty of water. Bring to a boil and simmer until nuts are black in color, about 30 minutes. Rinse with cold water and let drain. Halve nuts and divide among jars.

In a pot, combine vanilla bean seeds, 1 kg (approximately 2.2 pounds) sugar, 1 liter (approximately 4 1/4 cups) water and spices. Bring to a boil and simmer until sugar has dissolved. Pour mixture over nuts let infuse 1 day. Then drain syrup and transfer to a pot. Add 100 grams (approximately 3.5 ounces) sugar and bring to a boil. Pour mixture over nuts and leave to infuse for another day. Repeat process two more times.

4.

Pour nuts and syrup into jars, seal and store in a cool, dark place.
