- 1 kilogram little green Tomatoes
- 500 grams Red Hungarian wax pepper
- 1 ½ liters water
- 4 tsps salt
- 250 milliliters Wine vinegar
- 250 grams sugar
- 2 tsps multi-colored peppercorns
- 1 stalk cinnamon
- 1 tsp cloves
- 4 pickled Candied ginger (finely chopped)
- 4 Tbsps honey
- 4 bay leaves

Preparation steps

Rinse peppers, wipe dry and prick skin several times. Rinse tomatoes, pat dry and remove stem end. Prick tomatoes several times with a needle. Bring water and salt to boil. Add tomatoes and peppers, bring to a boil briefly and cook 2 minutes. Drain and layer in prepared jars.

Heat vinegar and sugar in a saucepan. Add peppercorns, cinnamon (broken into pieces), cloves, finely chopped garlic, bay leaves and honey. Bring brine to a boil and pour over tomatoes and peppers. Cover with lids and let cool. Refrigerate up to 3 weeks. Tip: To preserve the pickles longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/. Serve pickled green tomatoes as an accompaniment to grilled meat.
