- 2 ½ cups white wine
- 2 Tbsps honey
- 1 Tbsp peppercorns
- 4 ripe Pear (e. g. Williams, peeled)
- 2 Tbsps butter
- 11 ozs Leeks (cut into rings)
- ½ cup water
- salt

- 2 tsps thyme (chopped)
- 2 Tbsps vegetable oil
- 4 Steak (approx. 180-200 g each)

Preparation steps
1.
Place the wine, honey and peppercorns in a pan and bring to a boil. Add the pears, cover with a lid and simmer on a medium heat for 15-20 minutes.
2.
Heat the butter in a pan and gently cook the leeks until almost tender. Add the water, season to taste with salt and pepper and simmer for 6 minutes. Stir in the thyme.
3.
Heat the oil in a frying pan. Season the steaks with salt and pepper and cook in the frying pan on a high heat for 2-4 minutes on each side, until cooked to your liking.

Drain the pears and cut them open like a fan.
5.
Arrange the leeks on warm serving plates, place the steaks on top and serve garnished with a pear sprinkled with coarsely ground pepper and thyme sprigs.
