- 16 ozs new potatoes (scrubbed)
- salt
- Baby carrots (scrubbed)
- 9 ozs Snap pea (trimmed)
- ⅓ cup butter
- 3 Tbsps vegetable oil
- 4 Pork chop
- 4 scallions (chopped)
- 2 red Apple (cored and sliced)
- ½ cup dry Cider
- 1 tsp Dijon mustard
- freshly ground peppers

Preparation steps
1.
Cook the potatoes in a pan of boiling salted water until tender then drain well and keep warm.
2.
Boil or steam the carrots and mange tout until tender, drain and add to the potatoes. Gently stir in a little of the butter and keep warm.
3.
Heat the oil in a frying pan and fry the pork chops for 3-5 minutes on each side or until cooked through. Remove the chops from the pan and keep warm.
4.
Return the pan to the heat, add the remaining butter and gently cook the spring onions until soft but not brown. Add the apple slices and cook until they are lightly browned on both sides.
5.
Pour in the cider, let it bubble and reduce to a syrupy consistency then add the mustard and season with salt and pepper.
6.
Serve the chops and apples with the sauce poured over and the vegetables alongside.
