- 35 ozs Fillet of Beef
- salt
- 2 Tbsps brown sugar
- 3 Tbsps Dijon mustard
- 2 Tbsps Oil

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Season the beef with salt. Mix the peppercorns, sugar and mustard and spread over the top and sides of the beef.
3.
Heat the oil in a roasting tin and add the meat
4.
Roast for 20-25 minutes for rare beef, 40 minutes for medium, or 50 minutes for well-done.
5.
Remove from the oven and cover loosely with foil. allow to stand for at least 15 minutes before carving.
