1 Red Bell pepper
1 yellow Bell pepper
1 green Bell pepper
1 small Fennel bulb
1 onion
2 garlic cloves
150 grams Peas (frozen)
150 grams Smoked bacon
3 Tbsps vegetable oil
salt
freshly ground pepper
4 eggs
parsley (for garnish)

Preparation steps

1.

Rinse peppers, clean, cut in half, remove seeds and ribs and then dice.

Rinse fennel, cut in half lengthwise, remove stalk and cut bulb crosswise into strips.

Thaw peas.

Cut bacon into strips.

Peel onion and chop finely. Peel garlic and chop finely. Sauté both in a large pan in with oil, add bacon and fry, then add peppers and fennel and sauté for about 1 minute, stirring. Reduce heat, add 1/2 cup water, cover and simmer for about 10 min. Braise, add the peas, season with salt and pepper to taste and cook for another 3 minutes. Crack eggs separately on top of vegetables and let cook. Serve sprinkled with parsley.
