- 4 cups frying Steak (sliced)
- 3 Tbsps Nut oil
- 1 garlic clove (finely sliced)
- ½ inch fresh ginger (chopped)
- 2 shallots (thinly sliced)
- 1 freshly ground pepper (deseeded and sliced lengthways)
- 1 tsp light soy sauce
- 1 tsp dry sherry
- salt
- ground Black pepper
- ½ tsp sugar
- 1 tsp sesame oil
- fresh Basil (to garnish)

Preparation steps
1.
Put the steak in a bowl and add the marinade and leave for 30 minutes.

Heat a wok over a high heat until very hot and then add 2 tbsp of groundnut oil. When slightly smoking, add the beef from the marinade. Stir-fry for 3-5 minutes, until browned. Remove and drain on kitchen roll.

Wipe the wok clean and add the remaining 1 tbsp of groundnut oil. Heat the oil and then add the ginger, shallots and garlic and stir-fry for 20 seconds.
4.
Add the peppers, soy sauce, dry sherry, salt, pepper and sugar and stir-fry for 2-3 minutes. Return the beef to the wok and stir-fry for 3-4 minutes.
5.
Serve with fresh basil and an egg noodle stir fry
