600 grams fresh Peas
1 sprig Dill

Tarragon (1 sprig)
100 grams butter
2 egg yolks
1 tsp lemon juice

Preparation steps

1.

Bring 1 liter (approximately 4 cups) of salt water to a boil and stir in the peas. Rinse the herbs, tie together and add to the peas. Allow to cook until tender, about 10 minutes. Drain the peas and remove the herbs.

Melt the butter in a saucepan.

Whisk egg yolks in a bowl with 1 tablespoon of water and lemon juice, and season with salt and pepper to taste. Place the bowl over a pot of simmering water and whisk continuously until the mixture is smooth and thickened. Stir in the melted butter. Stir the peas into the hollandaise sauce and serve.
