- 4 small Pear
- 1 lemon (juiced)
- 200 milliliters Apple juice
- 400 milliliters dry white wine
- 1 tsp sugar
- salt
- 4 Tbsps dried Cranberry
- 200 grams smoked duck legs
- 4 Tbsps red Red currant jelly
- 1 pinch allspice
- 1 pinch white peppers
- thyme (for garnishing)

Preparation steps
1.
Peel pears, halve and core with a melon baller. Remove stems. Combine lemon juice with apple juice, wine, sugar and 1 teaspoon of salt in a saucepan and bring to a boil. Place pears into syrup and reduce heat, simmer for 4-5 minutes on low heat. Remove from heat and cool in syrup.

Place cranberries in a bowl and sprinkle with 3-4 tablespoons of syrup.

Cut duck breast into thin slices. Combine jelly with cranberries and seaosn with allspice, pepper and sauce.

Arrange well- drained pears on plates and stuff each half with 1 slice of duck breast and some cranberry sauce. Garnish with thyme and serve.
