30 grams fresh Yeast
200 milliliters lukewarm milk
400 grams Pastry flour
1 pinch salt
75 grams softened butter
50 grams sugar
2 eggs
For filling
750 grams Pear
2 tablespoons lemon juice
2 centiliters Calvados
4 tablespoons Apricot jam
2 tablespoons butter
2 tablespoons chopped almonds

Preparation steps

Crumble the yeast and stir until smooth with the milk. Mix together flour, salt, yeast milk, butter, sugar and eggs knead into a smooth dough. Cover and let rise in a warm place until doubled in bulk, about 1 hour.

Preheat the oven to 180°C (approximately 350°F). Grease the springform pan.

For the filling, peel, quarter, core and dice pears. Toss with lemon juice and Calvados. Roll out dough on a floured surface to about 40 x 50 cm (approximately 16 x 19 inches) and brush with melted apricot jam. Arrange the pears on it and roll up. Cut into 5 cm (approximately 2 inches) thick slices. Place side by side in the springform pan. Brush with melted butter and sprinkle with the almonds. Cover and let rise for about 20 minutes. Bake 40-50 minutes. Remove from oven, let cool, loosen from the mold and serve dusted with powdered sugar.
