- 250 grams Pastry flour
- 100 grams Peanuts (chopped)
- 2 ½ tsps Baking powder
- ½ tsp baking soda
- 3 eggs
- salt
- peppers
- 80 milliliters vegetable oil
- 300 grams Natural yogurt
- 1 Muffin tin
- Fat (for the muffin pan)
- or 12 Paper baking mold
Preparation steps
1.
Grease the muffin pan or arrange the paper baking cups on a baking sheet.

Combine the flour with 2/3 of the nuts, the baking powder and baking soda. Whisk the eggs lightly, season with salt and pepper, add the oil and yogurt and stir until emulsified. Stir into the dry ingredients until just combined.

Fill the muffin recesses with the batter, sprinkle with the remaining chopped nuts and bake in a preheated oven (180°C) (approximately 350°F) for 25 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven, let cool slightly then transfer to a wire rack to cool completely.

Serve with peanut butter, if desired.
