Preparation steps

1.

Score the peaches crosswise, and blanch briefly in boiling water. Rinse under cold water and peel the peaches. Halve the peaches and remove the stones. Finely dice and weigh the peaches. 

2.

Bring the peaches, lemon juice, and sugar to a boil in a pot. Cook for 1 minute, then fill the prepared jars to the brim with the jam. Seal tightly and cool completely.
