- 400 grams (approximately 14 ounces) Casarecce pasta (or other short pasta)
- 250 grams (approximately 1/2 pound) Radicchio
- 1 onion
- 150 grams (approximately 5 1/3 ounces) diced Bacon
- 4 egg yolks
- 50 grams approximately 1/4 cup) butter
- salt
- freshly ground peppers

Preparation steps
1.
Rinse radicchio, pat dry and cut into strips. Peel the onions and chop finely. In a skillet, heat the butter over medium. Add the bacon, onion and radicchio.

Cook, stirring occasionally until the bacon is cooked through, the onion is translucent, and the radicchio is tender, about 7 minutes. Season with salt and pepper. In a large pot of boiling salted water cook the pasta according to package directions until al dente. Drain.
3.
Toss the pasta into a bowl with the radicchio mixture and the egg yolks and mix well. Adjust seasoning if necessary and serve immediately.
