- 400 grams Pappardelle noodles
- salt
- 400 grams Italian sausage
- 350 grams broccoli rabe
- 1 garlic clove
- 1 shallot
- 2 Tbsps olive oil
- 100 milliliters dry white wine
- freshly ground peppers
- 2 Tbsps freshly grated Parmesan

Preparation steps

Cook pasta in boiling salted water until al dente.

Remove sausage casing and shape small balls out of sausage meat. Rinse and dry broccoletto. Cut stems into very small cubes and finely chop leaves. Peel garlic and shallot and chop finely. Heat oil in a pan and cook meatballs until golden brown on all sides. Remove from pan and set aside. Saute shallot and garlic in the same pan, add broccoletto and saute briefly. Deglaze pan with wine, season with salt and pepper and simmer for 3-4 minutes on medium heat or until almost all liquid is evaporated. Return meatballs to the pan and add drained pasta. Sprinkle with Parmesan. Season to taste and transfer to warmed plates. Serve.
