Pasta Salad with Shrimp and Vegetables
Rinse shrimp and pat dry. Peel garlic, squeeze through the garlic press and mix with herbs and 5 tablespoons of oil. Season with salt, pepper, add shrimp and let stand for 1 hour.
Rinse and dry bell peppers, halve and remove seeds and ribs, cut into 1 cm (approximately 1/2 inch) small cubes. Peel onion and slice finely.
Cook pasta in boiling salted water until al dente.
Heat oil in a pan and cook shrimp for about 1-2 minutes per side. Add vegetables and saute briefly. Drain pasta and add to the pan, season with salt, pepper and lemon juice. Rinse lettuce leaves, shake dry, transfer to plates and top with salad. Serve immediately.
