4 Tbsps olive oil
1 onion (diced)
3 ½ ozs Bacon (diced)
2 cloves garlic cloves
1 tsp chopped oregano
16 ozs ground Beef
14 ozs canned Tomatoes
1.333 cups Beef stock
1 Tbsp balsamic vinegar
1 pinch sugar
16 ozs Spaghetti
freshly ground Black pepper
4 Tbsps grated Parmesan

Variation: For a spicier version add a dash of Tabasco with the tomatoes.

Preparation steps

1.
Heat half the olive oil in a large pan. Add the onions and bacon and cook gently without browning for 5 minutes, stirring.
2.
Stir in the garlic and oregano and continue cooking for 1 minute. Add the beef and cook until browned.
3.
Add the tomatoes and their juice, the stock, vinegar and sugar. Bring to a simmer and cook for about 20 minutes, until most of the liquid has evaporated.
4.
Bring a large pan of lightly salted water to the boil, and cook the spaghetti according to the instructions on the packet, until tender.
5.
Drain the spaghetti well and return to the pan. Drizzle with the remaining olive oil and season with freshly ground black pepper.
6.
Divide the spaghetti between 4 warmed serving plates and top with the mince. Sprinkle with the cheese.
