400 grams peeled Tomatoes
200 grams Dry sausage

½ tsp ground paprika (hot)

Preparation steps

Add the rice to twice the amount of salt water and allow to swell for about 20 minutes, covered over medium heat. Then drain.

Rinse the peppers, cut in half, and cut into bite-sized pieces or cubes. Rinse the zucchini, cut off the ends, cut in half lengthwise and scrape out the seeds with a small spoon. Then cut into thin pieces. Skin the onion, chop finely and sweat in a large skillet in hot oil. Sauté the tomato puree briefly, add the peppers and zucchini and add the tomatoes. Cook for about 5 minutes. Cut the sausage into slices and mix with the rice. Spice with salt, pepper and two paprikas. Distribute the fried rice on plates and serve sprinkled with parsley.
