- ⅔ cup Barley (softened over night)
- 2 Tbsps clarified butter
- 3.333 cups Beef (shoulder, diced)
- 2 onions (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 Tbsp tomato puree
- ⅞ cup dry Red wine
- 1 cup canned Tomatoes
- 2 cups Meat stock
- ½ tsp Caraway
- 1 carrot (sliced)

- cayenne pepper
Preparation steps

Drain and rinse the barley.

Heat the clarified butter in a pot and fry the meat. Add the onions and the garlic and fry for a few minutes. Stir in the tomato puree and deglaze with the wine.

Add the tomatoes and the barley and stir in the meat stock. Season with caraway, salt and ground black pepper. Cover and cook for 1.5 hours.
4.
In the last 30 mins add the carrot. Season with salt, ground black pepper, paprika and cayenne pepper.
