- 1 Tbsp clarified butter
- 1 large onion (diced)
- 2 garlic cloves (crushed)
- 4 cups waxy potatoes (peeled and diced)
- 1 tin Tomatoes (400 g | 2 cups)
- 3 cups fish stock
- 4 cups Cod (cut into bite-sized pieces)
- 1 lemon (juiced)
- 1 Tbsp paprika
- 4 Tbsps flat-leaf parsley (chopped)
- ½ cup Crème fraiche

Preparation steps
1.
Heat the clarified butter in a large pot and fry the onion. Add the garlic and fry together for a few minutes.
2.
Add the potatoes and the tomatoes and stir in the fish stock. Simmer on a medium heat for around 15 minutes.
3.
Drizzle the fish with the lemon juice and season with salt and ground black pepper.
4.
Stir the paprika, parsley and the creme fraiche into the soup, then add the fish. Cover and simmer on a low heat for another 10 minutes. Season the soup with salt and ground black pepper.
