- 500 grams Pappardelle noodles
- salt
- 1 Tbsp Red peppercorns
- 3 garlic cloves
- 400 grams Italian sausage
- 2 Tbsps olive oil
- ½ tsp sweet ground paprika
- 2 Sage
- 1 tsp butter
- 20 grams grated Parmesan
- Sage (for garnish)

Preparation steps

Cook the pappardelle in salted water until al dente.

Meanwhile, coarsely grind the peppercorns in a mortar. Peel the garlic and cut into thin slices. Cut the sausage into thin slices. Heat oil and fry the garlic for 2-3 minutes. Sprinkle with paprika. Add the sausage slices and cook about 2 minutes while stirring. Rinse the sage, shake dry and chop finely.
3.
Drain the pappardelle and toss with the garlic-sausage mixture. Mix in sage, peppercorns and butter. Season with salt and sprinkle with Parmesan cheese and sage before serving.
