Pappardelle with Sausage
Peel shallots and garlic and chop finely. Rinse tomatoes and chop. Cut sausage into slices.
Heat olive oil in a large pan and sauté shallots and garlic until soft and translucent. Add sausage and cook, stirring occasionally. Add chopped tomatoes and white wine. Deglaze pan with puréed tomatoes. Add sugar, salt and pepper and cook for about 10 minutes at low temperature
Meanwhile, boil pasta in plenty of salted water until al dente. Drain and add to the pan. Season with salt and pepper to taste. Arrange in deep plates for serving.
