5 Tbsps olive oil
400 grams Cherry tomatoes
1 Red onion
1 garlic clove
2 Tbsps white balsamic vinegar
1 Tbsp Caper
2 Tbsps lemon juice
1 pinch sugar
Sea salt
freshly ground peppers
1 handful Basil

Preparation steps

1.

Cut the ciabatta into bite-sized cubes and toast crispy and golden brown in 2-3 tablespoons of olive oil. Drain on paper towels.

Trim, rinse and quarter the tomatoes. Peel the onion and garlic, dice the onion and finely chop the garlic.

3.

Whisk the remaining oil with the balsamic vinegar, capers, lemon juice and sugar and season with salt and pepper.

4.

Rinse the basil, shake dry and pluck off the leaves. Toss all prepared ingredients with the dressing and serve in bowls.
