Salmon convinces with its high content of omega-3 fatty acids, which protect the blood vessels and can prevent high cholesterol levels. Dill adds a fine spice to the pancake skewers and also scores points with its antispasmodic and soothing essential oils - so stomach cramps and flatulence can be reduced and digestion supported.
For more dietary fibre, the use of wholemeal spelt flour is recommended - this promotes digestion and keeps you full longer due to the length of time it remains in the intestine.

Ingredients
- For the pancakes
- 200 grams Pastry flour
- 350 milliliters milk
- 50 milliliters water
- 4 eggs
- salt
- For the filling
- 1 bunch dill weed
- 2 tablespoons peppercorns (pink)
- 100 grams Mustard (medium hot)
- 300 grams Gravlax (in slices)
- vegetable oil (for cooking)
- Wooden skewer
Preparation steps
Put the flour in a bowl and add the water and the milk while stirring, until smooth, then stir in the eggs. Let the dough rise for 30 minutes.
Meanwhile, chop the dill finely and mix with the mustard.
Pour the finished dough into a pan with a little oil to successively bake about 12 pancakes; let cool down.
Spread every pancake thinly with mustard and top with the salmon, roll up tight and cut each pancake into about 6 pieces, put on skewers and serve garnished with dill.
