Ingredients

For the salmon
400 grams Salmon (portioned)
1 lemon (juiced)
1 Bell pepper
1 stalk Leeks
peppers

For the mustard sauce
250 grams Crème fraiche
1 tsp lemon juice
2 Tbsps grainy Dijon mustard

Preparation steps

For the salmon: Drizzle the salmon with lemon juice and let stand for 10 minutes.

Rinse the peppers, cut in half, remove the seeds and cut into small cubes. Trim the leek, rinse and thinly slice.

Heat 2 tablespoons oil in a large frying pan and sweat the vegetables over low heat for about 5 minutes. Season with salt and pepper then remove from the pan and keep warm. Add 1 tablespoon oil to the pan and sear the salmon on both sides, until cooked to your liking. Season with salt and pepper.

For the sauce: Mix the crème fraîche, lemon juice and mustard together.

Spoon some sauce over the salmon and sprinkle with the sautéed pepper and leek. Serve immediately.
