Preparation steps

Rinse the fish, pat dry, drizzle with lemon juice and season with salt and pepper. Dust in flour, shaking off the excess.

Dice the bacon and fry in a hot frying pan until crispy. Remove from the pan and drain on paper towels.

Heat the oil and butter in the frying pan over medium heat. Pan-sear the fish for 4-5 minutes per side. Keep warm in a preheated oven (50°C) (approximately 125°F).

Arrange the fish on serving plates and sprinkle the bacon. Serve with lemon wedges, parsley potatoes and cucumber salad, if desired.
