Pan Fried Potatoes
Scrub the potatoes thoroughly, and cut into small, bite-sized pieces. Fry until crisp in hot oil over medium heat, turning occasionally for about 15 seconds. Rinse chillies, slit lengthwise, remove the seeds, remove the ribs. Chop very finely.
Mix the sage with the potatoes and cook for about 2 minutes.
To serve: Season with salt and pepper, and serve in bowls.
