150 grams button Mushroom

800 Instant Vegetable broth
4 Tbsps olive oil
250 grams Long grain rice
2 red Bell pepper
Sambal oelek
250 grams Cherry tomatoes

Preparation steps

Rinse vegetables, peel or trim as needed. Clean mushrooms and cut into quarters. Cut carrots and zucchini lengthwise into 4 cm (1 1/2 in) long strips. Peel garlic and chop.

Heat the vegetable broth.

Heat 3 tablespoons oil in a pan, add garlic, then add the rice and sauté. Add vegetables and mushrooms and cook briefly. Season with salt and pepper. Pour 700 ml (approximately 3 cups) hot broth into the rice, cover and simmer for about 20-25 minutes until the rice is cooked. Season with salt and pepper.

Rinse peppers, cut in half, remove seeds and ribs and chop. Heat remaining oil, sauté the peppers in it, add remaining broth and simmer 15 minutes. Puree and season with salt and sambal oelek.

5.

Rinse and halve the tomatoes. Serve paella on a plate, garnish with tomatoes and serve with chili sauce.
