For the steaks
4 BLS U1601 (each about 180 grams)
Salt peppers
2 Tbsps vegetable oil
For the tomatoes
750 grams Tomatoes
2 onions
1 garlic clove
2 Tbsps olive oil
4 thyme
1 small rosemary
4 stalks Basil
for sprinkling White vinegar
Salt freshly ground pepper
1 pinch sugar

Preparation steps

For the tomatoes: Blanch tomatoes in boiling water for 1 minute, rinse in cold water and peel. Quarter and remove seeds, chop coarsely. Peel onions and garlic and dice. Heat olive oil in a pan.

Saute onions and garlic for a few minutes. Add tomatoes and saute until almost all liquid has evaporated. Rinse and shake dry herbs, pluck off leaves and chop finely. Add herbs to tomatoes and season with vinegar, salt, pepper and sugar.

For the steaks: Season steaks with salt and pepper. Heat oil in a pan and sear steaks on both sides. Reduce heat and cook steaks for 5 minutes more. Remove from heat and let steaks rest for 3-4 minutes. Cut steaks into strips and arrange on plates. Serve with tomatoes.
