2 ripe Mangoes
2 scallions
600 milliliters Coconut milk (unsweetened)
½ Tbsp yellow Curry paste
2 Tbsps Lime juice
1 Red chili pepper
2 garlic cloves
salt
2 Tbsps cilantro (finely chopped)

Preparation steps

Peel the mango and cut into small cubes. Trim the scallions, rinse and cut into thin rings. Heat the curry paste briefly in a dry frying pan, then pour in the coconut milk. Stir the paste smoothly into the liquid and bring to a boil. Reduce the heat and let the sauce reduce to about 2/3 on low heat. Season with salt, then stir in the scallions and the diced mango. Season with salt and set aside.

Core the chile and cut into thin rings. Peel garlic and chop finely. Cook ostrich steaks in 2 tablespoons oil for 2-3 minutes on each side, then season slightly with salt. Mix garlic, chile and cilantro. Serve the steaks with the sauce on plates. Drizzle with the cilantro mixture and lime juice and serve immediately.
