- 350 grams Orzo
- 1 red Bell pepper (cut into thin strips)
- 1 onion
- 1 garlic clove
- 2 scallions
- ½ Cucumber (seeded and cut into cubes)
- 250 grams Smoked salmon
- 1 Tbsp Lemon peel
- For the marinade
- 2 Tbsps Mustard (medium hot)
- 3 Tbsps balsamic vinegar
- 1 Tbsp lemon juice
- 8 Tbsps olive oil

Preparation steps
1.
Cook the pasta in plenty of boiling salted water according to package directions until al dente. Rinse scallions and cut into rings.
2.
Peel the onion and garlic and chop finely. Blanch onion, garlic and scallion briefly in boiling salted water and rinse in cold water.
3.
Drain the pasta, mix with the onion mixture, cucumber cubes and bell pepper strips in a bowl.
4.
Mix all the marinade ingredients together and add salmon (torn into small pieces).
5.
Mix half of the salmon with the salad. Pour into a serving bowl and serve garnished with the remaining salmon and lemon zest to taste.
