Open-Faced Horseradish Spread and Apple Sandwiches

- 1 small onion
- 1 Tbsp Canola oil
- 200 grams Tofu
- 2 tart Apple
- 1 tsp freshly grated Horseradish
- 1 tsp lemon juice
- 4 slices Pumpernickel bread
- 2 Tbsps freshly chopped parsley
Peel onion, chop finely and fry in hot oil in a pan. Dice tofu. Peel, core and dice apples. Add diced tofu to onion and cook about 5 minutes until colorless and soft. Transfer onion and tofu to blender and puree. Season tofu puree with salt and horseradish and let cool.
Sprinkle diced apples with lemon juice.
Cover Pumpernickel slices with horseradish spread and top with apples and parsley.
