Preparation steps
1.
Preheat oven to 350ºF / 180ºC.
2.
Wrap tortillas in foil and warm in preheated oven 15 minutes.
3.
Meanwhile, cook ground beef, onion, red peppers and garlic in skillet until browned and no longer pink. In a separate pot, mash 1 can of beans in their liquid until smooth. Add remaining can of beans, plus taco sauce, chili powder, salt, and hot sauce. Stir well.
4.
Drain any excess fat from the beef mixture and add beef to the bean mixture. Stir and cook, over medium-high heat for about 5 minutes or until heated through. Remove from heat.
5.
Remove tortillas from the oven. Spoon 1/2 cup beef and bean mixture into center of each tortilla. Top with cheddar cheese and shredded lettuce. Tuck two sides over filling and then roll up.
