This onion tart recipe is smarter than classic recipes because we have replaced the white flour with Type 1050 flour, which is richer in minerals, and omitted the bacon. Bacon is one of the foods that can increase the risk of colon cancer.

Preparation steps

Dissolve yeast together with honey in 5 ounces of lukewarm water and let it rise for 5 minutes. Put the flour in a bowl, make a well in the center, and pour in the yeast water. Cover with a tea towel and let rise for about 15 minutes. Add butter as well as salt and knead everything into a smooth dough. Then cover again and let rise for about 60 minutes.

In the meantime, peel onions, halve and cut into fine strips. Heat oil in a frying pan. Sauté onions in it over medium heat for 10 minutes. Let cool slightly, then mix with eggs and sour cream and season with salt, pepper and cumin.

Knead the dough again, roll it out to the size of an empty baking tray, place on a baking tray lined with baking paper, and raise a rim. Pour the onion mixture onto the yeast dough and bake in a preheated oven at 180 °C / 350 °F for about 40 minutes.

Meanwhile, clean and wash the spring onions and cut into fine rings. Remove the onion tart from the oven, sprinkle with spring onions and serve cut into pieces.
