Ingredients

For the dough
350 grams Pastry flour
30 grams Yeast
1 pinch sugar
75 milliliters vegetable oil
1 tsp salt
For the topping
1 ½ kilograms yellow onion
4 Tbsps clarified butter
salt
Black pepper
1 fresh marjoram
300 grams Crème fraiche
3 eggs
200 grams Bacon

Preparation steps

For the dough: combine all dough ingredients with about 150 ml (approximately 3/5 cup) of warm water in a bowl. Process with the dough attachment of a mixer until smooth.

Knead on the work surface until dough holds together and is no longer sticky. Add more water, if needed. Cover and let rise in a warm place until doubled in bulk.

For the topping: peel onions and cut into rings. Heat 1 tablespoon if oil in two large pans and saute onions in both pans for about 10 minutes. Season with salt, marjoram and pepper.

Oil baking sheet.

Knead dough and roll out on lightly floured surface. Arrange on a baking sheet, making small edge all around. Spread with onions evenly. Whisk creme fraiche with egg and pour over onions. Sprinkle with diced bacon. Bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from oven and serve.
