700 grams onions
2 Tbsps vegetable oil
1 tsp sugar
salt

1 l Beef broth
200 milliliters beer
2 garlic cloves
1 tsp lemon juice
1 tsp freshly chopped thyme
4 slices Baguette (cut or white bread, lengthwise)
80 grams grated Gruyere
thyme (for garnish)

Preparation steps

Peel the onions and cut into thin rings. Heat the oil in a saucepan and saute the onions, stirring occasionally until soft, 10-15 minutes. Sprinkle with sugar and season with salt and pepper. Cook, stirring occasionally until the onions are light brown, about10 minutes.

Pour in the broth and the beer and bring to the boil. Reduce to a simmer and cook 15 minutes. Peel garlic and squeeze through a garlic press into the soup, stir in the lemon juice and thyme and season with salt and pepper.

Heat the broiler.

Top the bread slices with cheese and broil until the cheese is melted, about 5 minutes. Garnish with thyme and serve immediately with the onion soup.
