800 grams onions
2 Tbsps sunflower oil
1 tsp sugar
salt

800 milliliters Beef broth
200 milliliters dry white wine
2 garlic cloves
1 tsp lemon juice
8 slices Baguette
80 grams freshly grated Gruyere

Preparation steps

Peel onions and cut into thin rings. Heat oil in a saucepan and fry onions for 10-15 minutes while stirring slowly until soft and season with sugar, salt and pepper. Simmer for another 10 minutes, stirring occasionally, until golden brown.

Add broth and wine, let it boil and simmer for another 15 minutes. Peel garlic, squeeze through a garlic press into the soup and season with lemon juice, salt and pepper.

Preheat the oven broiler.

Fill 4 ovenproof ramekins with onion soup. Cover each with 2 slices of baguette, sprinkle cheese on top and lightly season with pepper. Bake under the preheated oven broiler, watching carefully, for about 5 minutes until cheese is melted. Remove from oven and serve immediately.
