600 grams Red onions
2 Tbsps vegetable oil
salt
freshly ground peppers
700 milliliters Beef broth
200 milliliters dry Red wine
1 garlic clove (chopped)
1 tsp lemon juice
½ bunch Cress
Chives
2 slices white bread (day-old)
2 Tbsps butter

Preparation steps

1.

Cut off bread crusts and cut bread into thin strips. Heat butter in a pan and cook bread until golden brown. Drain on paper towels.

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions for about 10 minutes or until soft. Add broth and wine, bring to a boil and simmer for 15 minutes more. Add garlic and puree soup, season with lemon juice, salt and pepper. Cut cress with scissors. Poup soup into bowls and sprinkle with cress. Top with toasted bread and garnish with chives. Serve.
