Preparation steps
1.
Heat the oil in a 26 cm/10" frying pan (skillet).
2.
Gently cook the onion until soft but not brown. Meanwhile, heat the grill (broiler) to its highest setting.
3.
Season the eggs with salt and pepper and pour into the pan. Stir gently then leave to cook until the eggs are nearly set.
4.
Place the pan under the grill until golden brown and cooked through. Serve topped with the tomatoes and the parsley scattered over.
