2 Tbsps clarified butter
500 grams potatoes

Preparation steps

1.

Rinse and trim the beans and cut in half if necessary. Cook in salted boiling water for 10 minutes, rinse in cold water and drain.

Peel the onions and chop. Cut the sausage into thin slices.

3.

Heat 1 tablespoon butter in a large pan. Saute the onions, and then add the sausage and beans and saute for a few more minutes. Season with pepper and savory and remove from the pan.

Rinse and peel the potatoes and cut into thin sticks. Heat the remaining butter in the pan, gradually add potatoes and sear. Season with salt and pepper and cook for 10 minutes.

5.

Spread sausage and bean mixture on top.

6.

Beat the eggs, season with salt, pepper and savory and stir in the cream. Pour over the potatoes. Cover and let the eggs set for a few minutes.

7.

Garnish with fresh savory, if desired, and serve.
