- 1 onion (diced)
- 1 yellow paprika
- 2 Tbsps olive oil
- 150 grams Hard cured sausage (or chorizo, smoked)
- 8 eggs
- 2 Tbsps Whipped cream
- salt
- ground paprika
- 2 Tbsps chopped parsley
- 8 Cherry tomatoes (halved)

- 100 grams Hard cheese (cut into thin strips)
- 4 green Pepperoncini (diced)
- 2 Tbsps olive oil
- 1 tsp Curry powder
- juice of lemons

Preparation steps
1.
Rinse bell peppers, quarter, core and dice.

Whisk eggs with the cream and season with salt and ground paprika.
3.
Sauté diced onions and sliced sausage in oil in a large skillet or 4 small frying pans. Add diced bell peppers and pepperoncini, sauté briefly and pour in eggs.

Bake on bottom rack in preheated oven at 180°C (approximately 350°F) convection for about 10 minutes.
5.
Sprinkle each omelet with a little curry powder, then top with cheese, tomatoes, and parsley sprigs. Drizzle with oil and lemon juice. Serve sprinkled with chopped parsley.
