20 milliliters Rum
125 grams butter
175 grams Pastry flour
50 grams fine Oats
50 grams ground almonds
1 tsp Baking powder
1 pinch salt
1 generous pinch cinnamon
100 grams sugar
2 Tbsps Vanilla sugar
2 eggs
150 milliliters milk
1 Banana

Preparation steps

1.

Place the raisins in a small bowl, sprinkle with rum and marinate for about 10 minutes.

Meanwhile, melt butter and let cool slightly.

Mix the flour with oats, ground almonds, baking powder, salt, cinnamon, sugar and vanilla sugar.

Mix eggs with butter and milk. Peel banana and mash finely with a fork.

5.

Put all prepared ingredients in a bowl and mix to a smooth batter.

6.

Line a 12-well muffin tin with paper liners. Pour in batter. Bake in a preheated oven at 180°C (convection oven 160°C) (approximately 350°F/convection 325°F) for about 25 minutes.

7.

Remove from the oven. Remove muffins from the tin and let cool before serving.
