400 grams Smoked pork chop
500 milliliters Beef broth
1 bay leaf
1 tsp Juniper berries
2 eggs
50 grams Pastry flour
75 grams Oatmeal
200 milliliters milk

Preparation steps

1.

Cut the smoked pork into 4 slices and simmer in the broth with the bay leaf and juniper berry for about 45 minutes.

For the pancake: Separate the eggs. Whisk the egg yolks, flour, oatmeal, milk and a pinch of salt until smooth. Let rest for about 10 minutes.

Wipe the mushrooms with a damp cloth and sauté until golden brown for 2-3 minutes in 1 tablespoon hot oil. Season with salt and pepper then set aside. Cut the cheese into cubes.

Whip the egg whites with a pinch of salt until stiff and fold into the batter. Working in batches, heat a little oil in a hot frying pan, add 1/4 of the batter and cook until golden brown on both sides, about 2 minutes per side. Keep the pancakes warm in a preheated oven at 70°C (approximately 150°F) while you cook the remaining pancakes.

Remove the pork from the broth, arrange over the pancakes along with the cheese and mushrooms, fold over and serve.
