600 grams cooked Boiled potato
5 Tbsps clarified butter (for frying)
500 grams cooked Smoked pork chop (boneless)
2 Tbsps scallions
100 grams Baby corn cob (glass jar)
100 grams Mountain cheese (grated)
l Whipped cream
2 egg yolks
salt
freshly ground peppers

Preparation steps

1.

Peel potatoes and coarsely grate. Reserve 4 tablespoons and set aside.

Drain corn.

Cut smoked pork into small cubes measuring about 1 cm (approximately 1/2 inch).

Heat cheese with reserved 4 tablespoons of grated potatoes. Let cheese melt while stirring.

Heat 3 tablespoons of butter in a large pan. Spread remaining potatoes in pan and fry over low heat for 3 minutes without stirring. Increase heat, turn potatoes and fry for another 3 minutes or until partially crispy. Season with salt and pepper and then flatten with a spatula into a pancake shape. Cook until crispy, another 5 minutes, adding more butter if needed. Cover and cook for an additional 3 minutes. Keep warm.

Add pork and corn to cheese sauce. Heat and stir in chives.

7.

Whisk heavy cream with egg yolks. Add some of the hot cheese sauce. Stir and pour back into sauce.

8.

Serve potato pancakes with pork and cheese.
