- ¾ cup quick-cooking Oats
- 1 Tbsp ground flaxseed (flax meal)
- ½ cup brown sugar
- ¼ cup cane sugar
- 1 tsp ground cinnamon
- ¼ tsp Sea salt
- ½ tsp baking soda
- ½ cup Pumpkin puree
- ¼ cup Coconut oil (melted)
- 1 tsp pure vanilla extract
- ½ cup dried Cranberry

Preparation steps
1.
Preheat oven to 350° F/ 175° C. Line baking sheets with parchment paper.

In a large mixing bowl, combine flour, oats, flaxseed meal, brown sugar, cane sugar, cinnamon, salt, and baking soda. Stir until well incorporated.
3.
Add pumpkin puree, coconut oil and vanilla. Mix until combined. Fold in the cranberries.
4.
Drop tablespoon-size scoops of cookie dough onto prepared baking sheet. Bake for 9-11 minutes. Cool cookies on baking sheets for 3-5 minutes before transferring to cooling rack.
