2 Tbsps sugar
¼ cup Corn starch
1 tsp cocoa powder
¼ cup plain Chocolate (chopped)
¾ cup soft butter
¼ cup powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4. Butter the loaf tin and dust it with flour.

Melt the cooking chocolate and butter in a bain-marie over hot water, and allow to cool slightly.
3.
Beat the eggs and sugar together until thick and creamy, and gradually add the melted chocolate. Stir in the crème fraîche. Sieve the flour over the top and fold in together with the baking powder and nuts.

Spoon the mixture into the tin, smooth the top flat and bake in the oven for around 25 minutes (test with a cocktail stick).

Once cooked, remove the cake from the oven, cool slightly, then turn out of the tin and cool completely on a wire rack.

Meanwhile, heat the milk and add the sugar, cornflour and cocoa powder to make a creamy pudding. Leave to cool.
7.
Melt the chocolate in a bain-marie over hot, but not boiling, water and leave to cool.
8.
Cream together the butter and icing sugar, then stir in the cooled melted chocolate. Finally, stir in the cooled pudding, a spoonful at a time, first removing any skin that has formed.
9.
Allow the mixture to cool until it is still smooth and suitable for piping. Spoon into a piping bag with a round nozzle (around 1 cm) and pipe onto the cake in stripes, lengthways. Garnish with chocolate decorations if desired, and serve.
