- 4 Quorn (fillets)
- 2 tsps Turmeric
- 2 Tbsps vegetable oil
- 1 onion
- 200 grams Nut (such as walnuts, cashews, peanuts)
- 2 Tbsps Orange juice
- 1 Tbsp Cornmeal
- 2 Tbsps freshly chopped thyme
- 1 tsp fennel seeds
- salt
- freshly ground peppers
- pickled Cranberry

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Cut the fillets lengthwise. Mix 1 teaspoon turmeric and 1 tablespoon oil. Brush the fillets with the oil mixture.

Peel and finely chop the onion. Finely chop the nuts and mix with the onion, juice, remaining turmeric, remaining oil, cornmeal, thyme and fennel seeds. Season with salt and pepper. Place the quorn in a baking dish and distribute the spice mixture around. Pour in a little water. Bake in the oven for about 20 minutes. Slice and serve with cranberries and green asparagus.
