- 2 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp Baking powder
- 1 tsp salt
- 1 cup unsalted butter (softened)
- 1 ⅓ cups light brown sugar
- 1 cup granulated sugar
- 1 cup extra crunchy Peanut butter
- 2 large eggs
- 2 tsps vanilla extract
- 1 cup ground, dry-roasted Peanuts

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
2.
Sift together the flour, bicarbonate of soda, baking powder and salt; set aside.
3.
Beat the butter until creamy. Add the sugars and beat until fluffy.
4.
Add the peanut butter until fully incorporated and then add the eggs, 1 at a time.
5.
Add the vanilla and gently stir in the dry ingredients and the ground peanuts.
6.
Roll the dough into 5 cm |2" balls. Place the balls on the baking trays, spacing them approx 6 cm |2 1/2" apart. Press a fork into each dough ball twice to make a crisscross design.
7.
Bake for 10-12 minutes until risen and slightly brown around the edges.
8.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
