- 1 ¾ cups Whole wheat flour (Type 1050)
- 2 cups Rye flour (type 997)
- ¾ oz Yeast (OR 5.5 g dried yeast)
- ½ tsp sugar
- ¼ cup melted butter
- ½ tsp salt
- ⅔ cup Hazelnuts (roughly chopped)

Preparation steps
1.
Sieve both flours into a bowl and make a well in the centre. Dissolve the yeast and sugar in approx. 100 ml lukewarm water and pour into the well. Mix in a little of the flour, cover and leave for approx. 30 minutes to start working.

Add the butter, salt, and approx. 150 ml lukewarm water and knead thoroughly with a dough hook until the dough comes away from the edge of the bowl. Cover and leave for a further 30 minutes to rise.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
4.
Turn the dough out onto a floured surface and knead in the chopped hazelnuts. Divide into 8-10 pieces and shape into rolls. Slash each one 1-2 times, place on the tray, cover and leave for a further 20 minutes to rise.
5.
Bake in the oven for approx. 20 minutes until golden brown. Remove from the tray and leave to cool.
