Ingredients

1 Chicken breast (150 g)
1 tsp clarified butter
150 grams macaroni
1 stalk Celery
2 small Apple
juice of lemons
200 grams concord Grape
200 grams Sour cream
½ tsp sugar
Tabasco sauce
salt
peppers (from the mill)
2 Tbsps chopped parsley
100 grams Radicchio

Preparation steps

1.

Cook pasta in a large pot of boiling salted water until al dente. Rinse in a colander under cold water and drain.

2.

Heat clarified butter in a pan, season chicken with salt and pepper, and fry for 5 minutes per side. Remove from pan and allow to cool.

3.

Rinse celery and cut into thin slices.

4.

Rinse apples, remve cores, quarter and cut into thin strips. Sprinkle with half the lemon juice and set aside.

Rinse and halve grapes, remove seeds. Cut chicken breast into thin slices and again into small cubes.

6.

Mix sour cream with remaining lemon juice and sugar, season with salt, pepper and a few drops of tabasco to taste.

7.

Mix noodles, chicken, celery, apples and grapes with the salad dressing and cover.  Let sit in refrigerator for 1 hour.

8.

Rinse and pat dray radicchio and remove leaves. Place leaves on plates serve topped with chicken salad and garnished with parsley.
