No-Bake White Chocolate Granola Cookies
Coarsely chop the white chocolate and melt in a double boiler or heatproof bowl over a saucepan of simmering water. Remove from heat, cool to lukewarm and stir in the granola, lemon zest, lemon juice and grated ginger.
Spoon small mounds of the mixture onto a baking sheet lined with parchment paper. Sprinkle the cookies with finely grated lemon zest, dust with powdered sugar and allow to harden.
